This recipe is for all you pumpkin junkies out there like me. These Pumpkin Chocolate Chip Muffins are easy to make and I am sure they would go wonderful with Darby's
Pumpkin Butter recipe. I paired mine with the store bought variety. Sorry no photo...it was early this morning when I was baking. :)
1 can pumpkin
1 1/2 cups vegetable oil
3 cups flour
4 eggs
s tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
2 cups chocolate chips
Beat eggs, sugar, pumpkin, & oil until smooth. Combine flour, baking soda, baking powder, cinnamon and salt; add to pumpkin mixture & mix well. Fold in chocolate chips. Fill greased muffin pan 3/4 full. Bake at 400 for 16-20 minutes. Makes 24 muffins.
*You can also use a mini muffin pan for bite size treats (I use mini choc chips instead).
